RIPASSO VALPOLICELLA DOC

 

Corvina, Corvinone, Rondinella, Molinara

Four Grapes blended  enhanced through a a passage in Amarone grapes bed.

Rich , velvety, deep ruby red with an intense ethereal bouquet of cherries notes, a great red robust and harmonic.

Food Pairing: excellent with  Roasted meat, Winter food based on the game meat. Aged cheese.

MORO DAL CASTEL

 

CABERNET SAUVIGNON

A superb red, Aging for at least 6 months  in bottle. Deep Ruby red, very peculiar scent of  spices, ripe fruits, velvety with dried red fruits notes.

Wine  to  drink  throughout  the  meal, excellent with Red meat, Game meat. Alcohol  content 13.

Cabernet Sauvignon Camul

 

100% Cabernet Sauvignon DOC. It ages inside Slavonian oak barrels for 18/24 months and it finally refines for 6/8 months in the bottle.

Deep ruby red color with violet nuances. Vinous and spicy aroma, slightly herbaceous.

 

Excellent with game, grilled meat and Parmigiano Reggiano cheese. Very nice to enjoy out of meals.

 

Alcohol Content: 13% vol.

 

Serving Temperature: 18-20°c

The wine should be uncorked half an hour before and poured into a decanter.

GRAN PASSIONE ROSSO IGT VENETO

 

VARIETAL COMPOSITION: 60% Merlot, 40% Corvina

 

APPELLATION: Veneto IGT

 

VINIFICATION:

Traditional red wine vinification at a controlled temperature between 25 and 27°C.

The grapes come from selected vineyards harvested at the beginning of October, to get a such level of maturation to have a high sugar level and good alcohol content. Grapes are naturally dried on vines for about 15 days. During this period the 50% of their weight vaporizes Withering is obtained cutting the grape shot but leaving the grapes on vines (Appassimento on vine). This gives the characteristic notes of ripe fruits, such as plums and raisins.

After the accurate hand harvest, grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavors and the characteristic ruby red color. Subsequently the wine is left in oak for about 3 or 4 months; this aging gives the pleasant notes of spices and vanilla.

HARVEST DATE:  beginning of October

 

TASTING NOTES:

Intense purple color, tending towards garnet with ageing. Flavors of crushed black raspberry, black cherry, plum compote. This wine has a very solid structure due to the elevated alcohol and the balance between soft tannins and acidity. The taste is juicy, spicy red with a riding creamy palate and a long, refined finish.

 

CULINARY SUGGESTIONS:

Great wine for roasted and grilled meats. Ideal with game dishes. Excellent with mature hard cheeses.

18 – 20° C

ROSSO IGT SALENTO VERSO

 

VARIETAL COMPOSITION: 60% Negroamaro, 35% Primitivo, 5% Malvasia Nera

 

APPELLATION: Salento IGT

 

AREA OF PRODUCTION/ORIGIN: Salento area

 

VINIFICATION:

The grapes come from selected vineyards in the Salento region, harvested at the beginning of October, to get a level of maturation such to have a high sugar level and good alcohol content.

After the accurate hand harvest, grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavours and the characteristic thick deep red colour.

Traditional red wine vinification at a controlled temperature between 25 and 27°C.

 

HARVEST DATE: End of September, beginning of October

 

ALCOHOL CONTENT: 14% vol.

 

TASTING NOTES:

The good late maturation gives the characteristic notes of ripe and dried fruits, such as plums and raisins.

The subsequent slight oak aging gives the pleasant notes of chocolate and spices that make this wine harmonic and balanced, pleasant and mature.

 

CULINARY SUGGESTIONS:

Great wine for roasted meats and with game dishes such as wild boar and deer. Excellent with mature and savory hard cheeses, it is also a good meditation wine.

 

SERVING TEMPERATURE:  18-20 °C.
